Instructions
 

  • In a large bowl, whisk together the egg yolks and granulated sugar until the mixture becomes pale and creamy.
  • Gently fold the mascarpone cheese into the egg and sugar mixture until well combined and smooth.
  • Prepare a cup of strong coffee (espresso preferred) and allow it to cool to room temperature.
  • Quickly dip each ladyfinger into the cooled coffee, ensuring they absorb the liquid without becoming overly soggy.
  • Arrange a layer of the soaked ladyfingers at the bottom of your serving dish, covering the base entirely.
  • Spread half of the mascarpone mixture evenly over the layer of ladyfingers.
  • Repeat the process with another layer of coffee-dipped ladyfingers, followed by the remaining mascarpone mixture.
  • Cover the assembled dessert with plastic wrap and refrigerate for at least 4 hours, or overnight, to allow the flavors to meld and the dessert to set.
  • Before serving, dust the top layer generously with unsweetened cocoa powder. For an added touch of elegance, sprinkle grated or shaved dark chocolate over the cocoa powder.
